Chicken Salad

Ingredients

5 servings

  • 1.5lbs boneless, skinless chicken breasts (with rib meat) - about 4 pieces
  • Salt and black pepper to taste
  • ¾ cup lower sugar BBQ sauce
  • ⅜ cup plain Greek yogurt
  • ⅜ cup mayonnaise
  • 5 cups bagged coleslaw mix

Steps

Step 1: Preheat Oven

Preheat oven to 450°F.

Step 2: Season Chicken

Season 1.5 lbs boneless, skinless chicken breasts with salt and pepper. Place in a shallow baking dish.

Step 3: Bake Chicken

Bake for 15-18 minutes until chicken reaches an internal temperature of 165°F.

Step 4: Shred Chicken

Shred cooked chicken using a stand mixer, two forks, or a hand mixer.

Step 5: Mix Ingredients

In a large mixing bowl, combine shredded chicken, ¾ cup lower sugar BBQ sauce, ⅜ cup plain Greek yogurt, ⅜ cup mayonnaise, and 6 cups bagged coleslaw mix. Mix until fully combined.

Step 6: Season

Season with additional salt and pepper to taste.
